he Blue Wahoos Stadium hosted their second annual “Under the Lights: A Farm to Table” dinner experience on May 11. A
limited number of tickets were available, and sold out quickly. The full-course, family-style farm-to-table dinner was originally
scheduled to be held on the second and third baselines of Admiral Fetterman Field at Blue Wahoos Stadium, but moved to the
balcony due to threat of rain. Guests were treated to an elegant menu highlighting fresh, locally-sourced ingredients, artfully
prepared by Executive Chefs James Briscione, and Joel Pena, with wine selected by Brooke Parkhurst. Briscione is a chef, author and Food
Network personality. He was the fi rst-ever, two-time Chopped champion and is the host of the award-winning Food Network digital
series Man Crafted. Parkhurst is a novelist, cookbook author, and former host of ABC’s internet and digital cable food series. Briscione
and Parkhurst regularly appear on Dr. Oz, and have been featured guests on The Today Show and Fox and Friends. Their fi rst restaurant,
Angelena’s Ristorante Italiano, is set to open in the fourth week in June in downtown Pensacola.
The menu included an appetizer of Angelena’s Tuscan Pimento Cheese, a fi rst course of asparagus and shrimp, featuring pickled shrimp,
grilled asparagus, little gem lettuce, and buttermilk parmesan dressing. The second course was a spring vegetable lasagna, with ricotta,
asparagus, sweet peas, broccoli, and salsa verde. The third course was slow roast lamb leg, C and D Mills grits, grilled spring onions, mint
gremolata, and tomato jus. Finally, dessert was a toasted almond shortcake, with orange cream, and Florida strawberries.
