he highly anticipated grand 
opening of The District: Seville 
Steak and Seafood was held on 
August 9. The Greater Pensacola 

Chamber, Buck Mitchell and family, and 
many of Pensacola’s fi nest business owners 
participated in the offi cial Ribbon Cutting, 
initiated by Mayor Ashton Hayward. 
The Mayor spoke on behalf of the City of 
Pensacola, marking the moment in the city’s 
long history. 

Guests were invited to tour the brand-

new restaurant, featuring a two-story, 
12,000-square-foot restaurant directly across 
the street from Seville Quarter. Owned by 
Wilmer Mitchell’s Rosie O’Grady’s Inc., 
the District consists of a fi rst-fl oor dining 
room, an upstairs lounge and a dry aging 
room for its beef, a room that will be visible 
to customers through a hallway window near 
the restrooms. 

The special feature of The District is the 

in-house dry aging of their own beef, adding 
a quality level that hasn’t really been seen 
in this area.  In addition to the dry-aged 
steaks, normal wet-age steak selections will 
be offered with custom-age steaks to make 
it onto the menu eventually. Beyond the 
beef, the District’s menu will offer fresh 
Gulf seafood, specialty composed entrees, 
an à la carte menu, a variety of vegetable 
and potato sides, appetizers, soups, salads 
and homemade desserts. Leather lounge 
chairs, love seats and couches, and cocktail-
height tables will fi ll the upstairs lounge 
area, which Carmichael expects to mirror the 
restaurant with its upscale-but-casual kind of 
atmosphere.
